I think risotto is one of the most technically difficult things to cook. It requires texture, consistency, doneness, flavor, and seasoning to come together simultaneously. It’s like a whole 3 course meal in one pan. Luckily for me, I learned from a master. Now, risotto is second nature. So, strangely, deciding to do it makes dinner easier for me… fewer pots, fewer things to watch. This is what I made on a Wednesday when I had an ear infection that my children gave me. So, even risotto can be easy… with years of grueling practice!
And it was delicious!!!!
